3 Ingredient Organic Brownies

3 ingredient brownies

I haven’t bought sugar, eggs, butter, or milk in five years, so I’m thrilled when I can make something that tastes like a dessert without using these traditional dessert ingredients.  This brownie recipe uses only 3 ingredients and the taste is close enough to the real thing to satisfy any brownie cravings I may have!

To make these, I use all organic ingredients from Trader Joe’s that I pick up during my regular grocery shopping.  To make them a little fancier, garnish with walnuts and/or dark chocolate chips (or spread the top with peanut butter ‘frosting’).

3 Ingredient Organic Brownies

  • 3 ripe organic bananas
  • ½ cup organic creamy peanut butter
  • ½ cup organic cacao powder

Line an 8” or 9” square baking pan with parchment paper.  Mash the bananas in a medium mixing bowl.  Add the peanut butter and mix well.  Sift the cacao powder in with the bananas and peanut butter and mix well.  Spoon mixture into the baking pan spreading evenly.

Bake at 350 degrees about 27 minutes.  Cool completely before cutting.

mini cookie cereal recipe

I had never tried making cookie cereal when it became such a sensation.  I started thinking about it again recently while watching the Kids Baking Championship on Food Network.  As a weekly challenge, these young competitors featured on the show were creating some fabulous cookie cereals as well as some companion mousses to go with them.  These children were so talented – truly amazing to watch!

Inspired by these fabulous children on the show, I decided to create some of my own cookie cereal.

I knew I wanted to use my favorite shortbread recipe as the cookie, but I was torn on how to change it up to modify it for a breakfast cereal – I got it down to two choices.

My first idea was a rosewater shortbread.  I thought the subtlety of the rosewater would make a great shortbread and I could add some chopped pistachios to the cookie and the cereal bowl for some added crunch.  It sounded like a really good flavor idea, but maybe more like a dinner party cookie than a breakfast choice!

So, I went with my second flavor idea…cinnamon!  I love cinnamon.  I buy Penzey’s brand spices which are super flavorful and the cinnamon is wonderful.  Cinnamon seemed a much more appropriate flavor for my breakfast cereal.  Plus, my “go to” nut milk is walnut (I drink Elmhurst brand – made with just filtered water and walnuts) and that would make a great pairing with the cinnamon shortbread!  I did add a little bit of instant coffee powder to my modified recipe as well – it is a breakfast cereal after all!  If it seemed the cereal needed a little extra crunch, I could throw in some chopped walnuts!

I modified and halved my usual shortbread recipe.  I didn’t want to have too many extra cookies around to eat!

I whisked together 1 ¼ cups flour, 1 ½ tsp cinnamon, ½ tsp instant coffee grounds and a dash of salt.  In a separate bowl, I beat 1 stick of softened butter with 1/3 cup confectioners’ sugar on medium speed with a hand mixer until well blended.  Then, I slowly added the flour mixture.  Once it was all incorporated and resembled coarse crumbs, I gathered the dough into a ball using my hands, wrapped it in plastic wrap, and popped it into the refrigerator for a half of an hour.

Next, I rolled out the cold dough on a piece of parchment paper to ¼” and cut small cookie shapes. (I used a little flower shape, but of course at this time of year, a heart would make a great choice as well!)   I put the cut dough shapes on parchment set on a baking sheet and set the baking sheet into the fridge for 15 minutes to firm before baking in a preheated 350-degree oven.

I baked them for about 11 minutes, watching them carefully.  Shortbread should never get brown, but these needed to be cooked completely to hold up as cereal.

I used a 1 ¼” cookie cutter, and got over 9 dozen cookies – plenty for a couple bowls of cereal!

After they were baked and cooled, they could be put into an airtight container until ready to use – maybe for a Valentine’s Day breakfast!

When I tasted them, I wondered why I never made cinnamon shortbread before – they were delicious!  And, in a bowl of milk?  Scrumptious!  I may never make cookie cereal again, but I will definitely make cinnamon shortbread cookies again – I am adding them to my holiday cookie list!

Make mini cookie cereal – check!  That was a fun experiment!

So, I have quite a few candy canes left from my holiday decor.  I love decorating with them, but I don’t really eat them!  Now that the holidays are behind us, I was trying to come up with some ways to use the leftovers!  Using them to stir hot cocoa is always fun!  I have pushed them into chocolate covered marshmallows which is also a fun way to use them.

I have never though, tried to melt them…until now!  After some experimentation, I discovered my candy canes got nice and soft, but not very hot, after being in a 250 degree oven for 5 minutes.  The softness made them flexible.  Since Valentine’s Day is approaching, I decided to make some hearts by putting two candy canes together.  I simply put the candy canes on a baking sheet covered with parchment paper in the basic shape I wanted.  After 5 minutes, I took them out of the oven and gently pinched the ends together.

Deciding to add chocolate – they are for Valentine’s Day after all and mint and chocolate go great together, right? – I took the hearts off the parchment paper and drizzled some dark chocolate onto the parchment.  I put the baking sheet into the fridge for a little bit to set the chocolate.  After taking the baking sheet out of the fridge, I set my candy cane hearts on top of the chocolate drizzle.

Next, I filled the hearts I created with melted white chocolate and popped the baking sheet back into the fridge to set.

After the chocolate was set, I took the hearts off the pan and ended up with some pretty drizzled peppermint/chocolate hearts!  A great recycling of my leftover candy canes!

There are so many variations possible with this simple procedure.  The drizzle can be pink or red if you prefer.  Or, forgo the drizzle and write a name on the heart when the chocolate is set.

I started this blog to inspire creativity.  One post that I know did so for a lot of followers was the one on oyster shell trinket dishes.

I was thrilled that so many people tried (and succeeded!) to make some on their own.  I know this because of the many emails I received telling me so!  I also got many questions related to the procedure – which is fine.  I tried to make the instructions as clear as possible, but I’m also up to help you through the process!

DIY evergreen heart wreath

Did you ever think of reusing your holiday greens?  You probably throw them out after the first of the year without much thought.  How about using them to make a Valentine wreath?

That is what I set out to do one of the warmer days this week.  I intended to replace my Christmas wreath with a heart shaped evergreen wreath.  This is an easy project and can be accomplished at no cost.  A wreath frame can be easily made by forming a wire hanger into the desired shape. Or, the wire frame can be purchased.  Either way, the same frame can be used to craft a wreath every year.

I thought I would make my wreath outdoors, but soon decided I did not want to stay outside – I know, I’m a wimp!  So, I set up a work space in the house.  This was made up of a sheet spread across the floor.  If you have ever made an evergreen wreath, you know it can get very messy – needles everywhere!

I piled up some greens onto the sheet and assembled my other supplies – garden shears, green wire, and my heart frame.

Making a heart wreath is just like making any wreath.  Small bundles of greens are clumped together and attached at the stems with wire.  Many bundles are made and are attached to the frame with the wire.  That really is all there is to it.  The quantity of greens used is purely a matter of personal taste.

The one difference with a heart wreath rather than a traditional circle wreath, obviously, is the shape.  A little care needs to be taken at the top and bottom of the wreath so that the shape is defined.

When I make a traditional round wreath, there is no trimming involved.  With a heart wreath, there may be a snip or two to help accentuate the heart shape.

After I covered the frame with greens, I just added a few leftover holiday gift wrap trimmings.

I put a piece of wire on the back to use for hanging.

When completed, the sheet I set up as a work station just gets picked up and taken outside for a good shake!

Easy, right?  Now I have a wreath to replace my Christmas wreath and it will stay until my Easter wreath goes up!

Any type of greens can be used or several types can be mixed.  Roping or swags from the holiday can be used or pieces can be cut from a live tree before it hits the curb.

This is the first Valentine’s Day in decades (wow…that sounds crazy!) that I have been single.  As you can probably tell by the way I started this post, I decided to focus on myself this year.  I decided to make Valentine’s Day all about falling in love with taking care of myself and to avoid all the hype of the day that is going on around me.  So far, it is working out pretty well!

Have you ever made a mug cake?  They are great!  Essentially, it is a cake made in a mug.  Certainly, a single size serving of cake made in a mug (with no extra dishes to wash) is a great invention, don’t you think?

For Valentine’s Day, I am sharing a recipe for a mug cake using Nutella and raspberries.  You can change up the recipe a little to accommodate your own tastes if you’d like.  The nice thing about experimenting with mug cakes is that you aren’t using too many ingredients if you decide to scrap one and keep trying different variations.

This recipe was created from all ingredients I had on-hand.  Something chocolate is a must on Valentine’s Day and, of course, I needed a little something red – hence, the raspberries!

Make one as a special Valentine treat to yourself!  Or, print up the recipe for it and attach it to a pretty mug as a Valentine gift!

Valentine Mug Cake Recipe

  • ½ cup minus 1 Tablespoon all-purpose flour
  • 2 teaspoons cocoa powder
  • 3 Tablespoons sugar
  • ¼ teaspoon baking powder
  • 3 Tablespoons milk
  • 2 ½ Tablespoons plain Greek yogurt
  • 1 Tablespoon Nutella (plus extra for spreading on top)
  • 1 Tablespoon crushed raspberries
  • 5 mini marshmallows
  • Extra marshmallows & raspberries for garnish

Combine the flour, cocoa powder, sugar and baking powder in a mug.  Add remaining ingredients to the mug and stir well to combine.  Cook in the microwave for 1 1/2 minutes on 80 percent power or just until a toothpick inserted comes out clean.  Cool 1 minute.  Spread the top with additional Nutella if desired and garnish with marshmallows and raspberries.

It’s easy to get into the Galentine’s or Valentine’s Day spirit simply by using a heart shaped cookie cutter on something edible!  Transform something ordinary into something extraordinary with a simple cut!

You have seen me use a cookie cutter on Valentine’s Day before…remember the Valentine stuffed French toast The lavender shortbreads?  Or, even the bird seed for the bird feeder?

Well, today I am taking my Fancy Watermelon Salad (click here for original recipe) and transforming it for Valentine’s Day, simply by cutting the watermelon rounds into hearts!  Easy, right?

In the same way gingerbread houses are decorated for Christmas, or eggs for Easter, why not create candy skewers for Valentine’s Day?  In my last post, I showed you some elegant Valentine’s Day skewers I created as gifts.  Today, for Friday field trip, I am using the same idea as a fun children’s activity!

Just assemble a table full of Valentine’s themed candy and/or cookies, and add the children!

Just be cautious when using skewers with children – safety first!  Consider the age of the children you are with, and be sure to supervise appropriately!  (You can even cut off the sharp ends of the skewers if necessary.)

You may just find that the finished skewers never make it to a recipient!  But, the children will have a blast creating (and eating) them!
