‘unbeetable’ hummus

Beet Hummus appetizer at Flora in CT

When I was a kid, I hated beets!  They were a staple on my grandmother’s Sunday table, but I would not go anywhere near them!  But, as an adult, I have developed a fondness for these root vegetables.

My most recent beet discovery came when I visited Flora – a restaurant with a plant based menu located in the Blue Back Square section of West Hartford, Connecticut.  It was the first time I had tried beet hummus and it was absolutely yummy!  This snack motivated me to research every beet hummus recipe I could find to try and recreate Flora’s delicious appetizer the best I could.

Many of the recipes I found used chickpeas, but I chose to eliminate the chickpeas and make the beets the star of the dish!  If beets appeal to you at all, I would definitely urge you to try beet hummus!  Here is what I did to make beet hummus, as inspired by the one I enjoyed at Flora!

Beet Hummus Recipe

  • ½ lb. fresh beets (4-5 medium), prepared
  • 2 Tbsp. tahini (sesame seed paste)
  • 1 garlic clove, minced
  • 4 Tbsp. fresh lemon juice (2 lemons) plus 1 Tbsp. zest (1 lemon)
  • 1 Tbsp. ground cumin
  • Salt and pepper to taste
  • Extra virgin olive oil as needed

To prepare the beets (cleaning them prior to cooking), I covered them with water in a saucepan and simmered them until tender and they felt soft when pricked with a fork.  It took about 35 minutes.  After they cooled down, I peeled them and cut them into cubes.

I put all the ingredients except the olive oil into a food processor and processed until smooth.  When serving, I drizzled the hummus with a bit of extra virgin olive oil.

Pita chips, as well as fresh carrot and cucumber curls, go great with this hummus!

Even though I wouldn’t eat them as a kid, I really enjoy beets as an adult! One of my favorite beet dishes – the beet soup at The River Tavern in Chester, Connecticut.

I think the pretty color of beet hummus makes it ‘unbeetable’ to serve as a Valentine’s Day appetizer!  I hope you are inspired to try it!

What to do on the first warm day of spring?  Eat outside!

For Friday field trip today, I am taking you out to my backyard to witness the first outdoor hors d’oeuvres of the season!

We all know the best outdoor appetizers are yummy ones that require very little preparation. Manchego and fig crostini fit the bill perfectly! The crostini, serving as the base for this snack, are easy to make and can be made in advance. The rest of the prep is super simple. These little delights can even be assembled right at the table – a wonderful thing, since casual is the buzz word for outdoor entertaining!

You don’t need to go to a fancy gourmet shop for fig spread. I find it right in the deli section of the local grocery store.

Manchego & Fig Crostini

• Fig spread (I used Dalmatia)
• Manchego cheese, shaved or sliced thin with a serrated knife.
• Baguette, cut into ½” slices
• Extra virgin olive oil, salt & pepper

Cut a baguette into ½” slices. Brush with oil and sprinkle lightly with salt and pepper on both sides of each piece. Place on baking sheet and toast under the broiler for 1 – 2 minutes until golden, then flip over and broil the other side. Spread a generous amount of fig spread on each piece and top with shavings of Manchego cheese.

I hope you will try this crostini – a great first alfresco hors d’oeuvre of the season! Just be warned that this taste combination can be addicting! I couldn’t stop eating these! What started out as a way to use up some Manchego cheese, ended up as dinner! Thanks to my friend Linda for suggesting the flavor combination!

If watching television is going to be a special occasion, preparing a special snack to accompany it is in order – so while football fans are enjoying beer and barbeque, my idea of the perfect television fare is a little different…

For quite some time my favorite show has probably been Top Chef.  I love shows on Food Network and HGTV.  I won’t watch scary movies or graphic violence…I still have nightmares from the shower scene in the movie Scarface.  So how did I come to love a show that involves so much graphic, drug related violence?  It happened during the snowstorm last winter when the record breaking snow made it impossible to drive anywhere for four days and I started watching some on demand television shows.

And, in spite of the violence, I got hooked on Breaking Bad…the brilliant writing and the phenomenal acting had me enthralled…yes, I do sometimes close my eyes for some of the more graphic moments (like the twins!)…but, I have now watched every episode… and as the final 3 episodes air, I prepare for each one ceremoniously.

My appetizer recipe…I garnished mine with walnuts. You can change up the pears with apples, caramelized onions, etc.

This was my special snack for last Sunday’s episode   It is easy to prepare and really tasty.  If you keep a loaf of bread in the freezer, a quick and delicious appetizer is always at the ready…for unexpected company or, in my case, a snack for a television obsession.
