A really cool thing I did while in California was to attend an olive oil tasting.  You may have done this before, but it was my very first time.  The place I went to in San Juan Capistrano offered an assortment of olive oils, balsamic vinegars, and wines…as well as appetizers created from their offerings.

The reason I wanted to post something about this was so I could share with you the amazing aha moment I had during my visit.  What was it?  To find out olive oil is a substitute for butter in baking!  Why had I never thought of this healthy alternative!

The best part of my visit was hearing some of the pairings possible…like using blood orange infused olive oil in place of butter in a brownie recipe!

One of the great things about living in the Northeast is being able to visit some fabulous city libraries.  Boston, New York, New Haven, Philadelphia…all locations of wonderfully historic libraries!   Today it seems appropriate to have a library related post during National Library Week!

Established in 1848, the Boston Public Library (BPL) has the added distinction as the first large free municipal library in the United States.  The present Central Library in Copley Square has been home to the library and has served as its headquarters since 1895, when Charles Follen McKim completed his “palace for the people.”

Though I have visited the BPL many times, until very recently, I had never attended an event held in the library.  This changed when some special friends invited me to attend a baby shower in the library’s Courtyard Tea Room!

I was so excited, not only to attend an event in the Tea Room, but also to spend time with friends as well.  A literary themed baby shower!  How cool!  My love for old books was set into overdrive!

I would need to wrap the gift I brought on theme, of course!  I also ordered a book in the shape of the baby’s initial to include with my gift. I love that all the invited shower guests were asked to bring the baby a book in place of a card!  (So hard to choose just one!)

Overlooking the beautiful Italianate Courtyard in the Boston Library’s historic McKim building, this stunning venue is the perfect location for a grand occasion!

The newly renovated Map Room adjoining the Tea Room is also a great spot to visit as well!  The Map Room serves wonderful tea infused cocktails with a literary theme like ‘tequila mockingbird’ and ‘catcher in the rye.’  Look at the stunning overhead view in the Map Room!

I have a passion for baking and baking shows and I love to see every variety of dessert provided at a hotel.  I always check out every dessert possible in every hotel I happen to visit!

At the Ritz-Carlton Laguna Niguel, I discovered a new dessert this trip that ended up my favorite – a baklava cookie!  It tasted much like baklava but more in a cookie format.  It had a shortbread crust and all the flavors of a traditional baklava.  Heavenly!

Visiting the Ritz-Carlton Laguna Niguel is such a fabulous experience.  I love the California lifestyle anyway, but staying in this particular Ritz in Southern California is the best way to live it!

living like a local

I did want to live like a local on my recent excursion to Orange County, California.  I was told one thing I had to experience, if I was indeed living like a local, was a burger from In-N-Out.  I guess the equivalent of a McDonalds or Burger King on the East Coast is In-N-Out on the West Coast.

I was game.  So, my friends took me for a late dinner one night to give it a try.  I admit – the burger was good.  But, more interesting by far was the menu.  Or, I should say, lack of menu.

There was a whole ‘secret’ menu going on!  To simply order something from the menu meant missing out on a bunch of interesting choices from the ‘secret’ menu – all the choices that were not written down anywhere, but could be ordered if you happened to know the ‘secret’ names!

As an East Coaster, of course I knew none of the ‘secret’ names, but my friends did.  That is how I happened to order a burger ‘Protein Style.’  Instead of placing my burger in a bun, the meat was simply wrapped up in fresh lettuce.  Perfect for me!  It tasted even better knowing it was a ‘secret’ menu item!

Some of the other ‘secret’ items the locals can order?  ‘Animal Style Fries’.  This seems to be a must-have for Californians.  The famous hand cut fries from In-N-Out are smothered in cheese, grilled onions, and then topped with a glob of their secret spread.  It seemed everyone around me was enjoying these babies!

Next time I happen to be in the vicinity of an In-N-Out, I think I would try ‘The Flying Dutchman’ – this is two perfectly cooked meat patties held together with a few slices of melted cheese in the middle…I do like some cheese with my burger!

All and all- a really fun trip with my friends to my first In-N-Out tasting!  In addition to ordering from the ‘secret’ menu, I think the food tasted that much better because we stopped for dinner after being stuck in SoCal traffic for hours!  Living like a local!

I just couldn’t resist posting photos of the fabulous lunch I had at a place called The Herb Box in Scottsdale, Arizona.

The entrée was so unique and so tasty, I am sharing it today on Friday field trip.  What was the entrée?

Butternut squash corn enchiladas…so good!   The restaurant has even received accolades for this meal as the best vegetarian lunch in Scottsdale.

a valentine mug cake

Have you ever made a mug cake?  They are great!  Essentially, it is a cake made in a mug.  Certainly, a single size serving of cake made in a mug (with no extra dishes to wash) is a great invention, don’t you think?

For Valentine’s Day, I am sharing a recipe for a mug cake using Nutella and raspberries.  You can change up the recipe a little to accommodate your own tastes if you’d like.  The nice thing about experimenting with mug cakes is that you aren’t using too many ingredients if you decide to scrap one and keep trying different variations.

This recipe was created from all ingredients I had on-hand.  Something chocolate is a must on Valentine’s Day and, of course, I needed a little something red – hence, the raspberries!

Make one as a special Valentine treat to yourself!  Or, print up the recipe for it and attach it to a pretty mug as a Valentine gift!

Valentine Mug Cake Recipe

  • ½ cup minus 1 Tablespoon all-purpose flour
  • 2 teaspoons cocoa powder
  • 3 Tablespoons sugar
  • ¼ teaspoon baking powder
  • 3 Tablespoons milk
  • 2 ½ Tablespoons plain Greek yogurt
  • 1 Tablespoon Nutella (plus extra for spreading on top)
  • 1 Tablespoon crushed raspberries
  • 5 mini marshmallows
  • Extra marshmallows & raspberries for garnish

Combine the flour, cocoa powder, sugar and baking powder in a mug.  Add remaining ingredients to the mug and stir well to combine.  Cook in the microwave for 1 1/2 minutes on 80 percent power or just until a toothpick inserted comes out clean.  Cool 1 minute.  Spread the top with additional Nutella if desired and garnish with marshmallows and raspberries.

inspirational eatings for 2019

I recently read some inspiring words that I took to heart for 2019*.  So, my next few posts will be a little different than usual.  For three posts, I want to share some of my motivation for 2019.  I have divided it into 3 categories.  Today’s category is FOOD.  Here are my top 5 food related changes for 2019.

Stop consuming caffeine.  Being dependent on caffeine isn’t good.  I gave up diet colas years ago, but seem to have a tough time with coffee and tea.  My goal is to switch out the beverages with caffeine to herbal teas.  They say it takes 2 weeks to create a habit so it may be a rough 2 weeks!  But, I am looking forward to getting rid of the false energy source!

Consume 30 grams of protein within the first 30 minutes of walking up.  This keeps you full longer and keeps blood-sugar levels steady as well as eliminates white carbohydrate cravings.  It is hard to do because it takes some planning.  Not a big eggs person, a planned-in-advance protein shake is my best bet!

Stop consuming refined sugar.  I have done this successfully in the past with amazing results.  EVERYTHING looks and feels better without sugar!  Studies have proven that even our brains experience a radical change when sugar is eliminated!  I usually slip back to eating it when something rough in my life is going on…not good!  It does take some work to avoid this stuff that seems to be in everything, but it is SO worth it!

Eat at least one meal with family each day.  This was something we took seriously in my family when my children were growing up.  We always made sure we spent our dinners together each day.  Now that that the children are grown, I can’t have us all together every day, but I want to create a time when all my family gets together for a meal as part of my routine.  I know It can’t be every day, but it will be on a regular basis.

Buy a juicer and juice a few times per week.  I know how healthy juicing is – a great way to get tons of vitamins and nutrients from fruits and vegetables.  I have wanted to make juicing a part of my routine for some time now.  I love the idea of adding lots of greens into my system with something I can drink and I love the idea of making green drinks myself rather than purchasing them.  The parts I don’t like?  1. It seems pretty expensive to buy all the organic fruits and vegetables to put into the juicer.  2. Making space in my kitchen to house the juicer.  But, these things aside, I am making a commitment to myself to do more research on juicers for 2019 in the hopes that I may convince myself to purchase one at some point during the year.

I recently discovered riced cauliflower and it has opened up a whole new cauliflower world for me!

Used as a base for a main dish, riced cauliflower is very versatile!  Because the best way to preserve its nutrients when cooking cauliflower is to gently sauté it on the stovetop – I use riced cauliflower straight from the freezer to the stovetop!

Add green peppers or whatever vegetables you have on hand or chicken or beans, etc.  And, switching up the spices can change the whole taste of the creation!  Use my basic recipe below and change it up to suit your own taste.

I think if you try riced cauliflower for a meal one night, you will want to stock up on some bags for your freezer.  I buy plenty at Trader Joes – they are inexpensive and so handy!  I use the entire bag when I make a dinner and have a little left over for lunch the next day.

Why am I so excited about adding more cauliflower to my diet?  After doing some research on eye health, I found diets richer in sulforaphane form a more preventative long-term approach to reducing macular degeneration and help protect eyesight.  And, cruciferous vegetables – like cauliflower, broccoli, and cabbage – are a good source of sulforaphane.  Since I have been doing whatever I can to find natural ways to encourage good eye health, I am stepping up my cruciferous vegetable intake!

(The only downside of these vegetables are for those that need to limit purines in their diet since they do contain purines – if this pertains to you, keep your intake to a modest level!)

Recipe:  Heat 1 Tablespoon olive oil in a pan.  Add 1 small finely chopped onion, 3 cloves minced garlic and 1 finely chopped jalapeno.  Cook for a few minutes until the onion is translucent.  Add 2 finely chopped tomatoes, 1 teaspoon cumin powder, ½ teaspoon paprika and a pinch of salt.  Cook for a few minutes until the tomatoes are softened.  Add a 12-ounce package of frozen riced cauliflower to the pan and mix well.  (I hit the package on my countertop a couple of times to break up any frozen clumps.)  Stir fry for about 5 minutes – just until hot – not mushy.  Garnish with cilantro, sliced avocado, and a squeeze of fresh lime!  (The dish pictured here definitely needed a little chopped cilantro on top to add more freshness!)

One of the best things to happen to me during the holidays was visiting with a family I know from Spain who were in the U.S. on vacation.  It had been a long, long time since we had been together and the visit was fabulous!  If the time spent together wasn’t gift enough, I was also given some gifts brought from Spain by my friends.  One of these gifts was an assortment of sweets from the area of Spain where my friends live.  Very different from the typical candy consumed by Americans on a day-to-day basis, I’d like to tell you a little about the four tasty sweets I received from Spain!

These little white candies are labeled pinones.  I knew right when I tasted them that they were pine nuts with a candy shell.  Pine nuts (also called pignoli) are the edible seeds of pine trees.  The most popular use of these teardrop-shaped, delicious little nuts here in the U.S. is in pesto.  You may also see them adorning the tops of Italian almond cookies.  If you’ve ever purchased them, you know they are one of the most expensive nuts on the market!  Why so expensive?   the answer lies in the time involved to grow the nuts and the effort to harvest the seeds from their protective encasement.

I have to think pine nuts are much more affordable in Spain than the U.S.  I know pine nuts produced in Europe mostly come from the stone pine (Pinus pinea), which has been cultivated for its nuts for over 5,000 years, and harvested from wild trees for far longer.

In addition to pine nuts, the list of ingredients translated from the package of my candy pinones are just three – sugar, cinnamon, and corn starch.  They are very tasty!  Because of their texture and size, they remind me a little bit of candied sunflower seeds.

The second candy was easy to identify without tasting – probably because of its popularity at Italian weddings!  These are candied almonds.  Almonds are synonymous with Christmas throughout Europe.  I found out that this is most obvious in Spain where almost every conceivable Christmas dish is a potential candidate for the addition of almonds.  Spain is a large producer of extremely good quality hard-shelled Mediterranean almonds.  They are harvested just a couple months before Christmas and the reason they are used so much is because they are fresh and must be eaten!   The protein value in the nuts is recognized – there is a saying in Spain that a handful of almonds is worth a small beef steak!

The typical candied sweet, made from almonds coated in sugar, originates in Valencia and is often present on the Christmas table.  The major producers of sugared almond in Spain are found in the towns of Casinos in Valencia and Alcoy in Alicante, where sugared almonds have been manufactured and exported from, using a traditional manufacturing process, for a least 2 centuries.  My friends live in the town were the almonds were originated!  I feel so lucky to taste the candies created from where they originated and made from recently harvested almonds!  The freshness was so obvious and the sugared almonds were the first of the four packages of candies to disappear!

Since Spain is the birthplace of modern chocolate, I was excited to have some chocolate included in my collection of sweets from Spain.  Spanish explorers first brought chocolate to Europe more than 500 years ago and they were the first to mix cocoa with sugar.  The translated ingredients listed on my package of chocolate is sugar, cocoa, flour and cinnamon.  The taste of this candy is nothing like what you would call chocolate here in the U.S.  It has a very grainy consistency and a subtle flavor.

This last candy in the selection had no ingredients or description other than ‘Dulces Hispania’ or Spanish sweets.  Reminiscent of old-time space saucer candies (remember those?), they have a wafer-like exterior and a soft, subtle almond flavor filling.  It seems to me the filling must be marzipan.  Because of the abundance of almonds, marzipan (almond paste) is popular at the holidays in Spain.  The contrast of the textures in the candy is very appealing.
